Amsterdam Spring Bock hits the LCBO's shelves this month, and while it doesn't exactly scream "spring" to me, it certainly is a well-crafted beer and a serious kick in the ass to your taste-buds.  A very refreshing aspect of this beer, other than the taste, is that it isn't just loosely using the term doppelbock.  It actually IS a doppelbock, true to the style in almost every way.  Just be prepared for some serious flavour action here, because this beer isn't fucking around.
I don't usually waste too much time talking about the colour of a beer, but after reading so many online user beer reviews, I feel like the world needs to know the actual colour of unstained mahogany:

So anyways, Spring Bock is not the colour of Mahogany, and now that I've got that out of my system let's proceed to the aroma.  For a beer of this potency the aromas are rather subdued, but still complex.  There's clearly a sweet caramel maltiness but also an earthy quality presenting grasses, wood, leather and spices.  The flavour profile follows the same lines, except everything is ramped up a few notches.  Every sip starts off with a huge blast of super-sweet malty goodness, with toffee, caramel, cider and dark fruit leading the way.  The earthy qualities start to present themselves toward the back end, as the beer gets a little more spicy and bitter as some hops and yeasty flavours show up.  However, the bitterness is no match for the syrupy sweetness that dominates all the way through.  The 7.3% ABV is also quite noticeable, and this intense booziness, combined with the sweetness, creates a very rich and full bodied beer.  Having said that, this beer is not for the faint of heart, and if you can't tolerate a sweet, boozy beer I would venture to say that you may have a hard time cheerfully polishing off the entire 500ml bottle.  Spring Bock also has big mouth-feel, full and rich, going down smooth and finishing rather dry.  There's a lot going on here, and for the connoisseur it's a chance to really analyze and dissect, but for the average beer drinker there's a chance it might be a little too much of a good thing. 
In the end Spring Bock is definitely a must-try for all craft beer adventurists out there, and for fans of the bock styles it will be a real treat.
